The best place to get a steak, according to readers of the Lincoln News Messenger, is Austins Steakhouse in the Thunder Valley Casino. “It’s awesome,” said Chef Lance Carlini when he heard the news. “It’s great to keep contributing great things to the community. That keeps the customers coming back to get that steak they love.” The secret to the award-winning steaks, Carlini said, is the fact that they are cut in-house every day by the butcher, dry aged up to 32 days and marinated every day. Another aspect that makes great steak, according to Vice President of Food and Beverage Scott Kidd, is a mix of mesquite charcoal and hickory wood, which creates a “flame-kissed steak with a smoky flavor.” Carlini’s favorite steak is the 22-ounce, bone-in rib eye, cooked medium rare. “It has awesome marbling and melts in your mouth,” Carlini said. Carlini added that Austins has won a number of awards for its’ steaks and its’ wine list. “It’s always an honor to be recognized by the public we serve every day,” Kidd said. “We have lots of regulars, our staff is great and the ambiance here is wonderful.” ~ Brandon Darnell
